Meet The Team - Lee Laverty
On Saturday 17th & Sunday 18th March the LegenDerry Food Festival will be taking place in Guildhall Square as party of the Spring Festival / St Patricks Day Celebrations. Our Head Chef Lee will be taking part in one of the food demonstartions as part of the festival - he is expected to be on stage at 4pm on Sunday 18th March.
Before Lee takes part in the event we asked him a few questions to find out more about his role in our team:

How Long Have You Worked In Bishops Gate Hotel:
I started in February 2016 just before the hotel opened.
The one place in the local area that visitors should see is:
Until recently I had never been on the City Walls. During a staff training day we went out and took in the city as if we were visitors and I was able to take a walk around the City Walls. The views of the city from The City Walls is fantastic and a great way to see a lot in a short period of time.
What is the best part of your job:
I really enjoy coming up with new menus & new ideas alongside my team. As we have a lot of regular guests that stay and dine with us I like to provide new exciting dishes for them to try and look forward to. We have a great team in the kitchen and most importantly we have fun while we work. I really enjoy the teaching side of my job, showing the other members of the team things that may be beneficial to them or training new staff members. My job is one where I am constantly learning new things as I work which makes each day different.
Favourite type of food to cook:
I really enjoy working with seafood. There is so much you can do with this and we are very lucky to have locally sourced and produced seafood on our doorstep. I prefer creating simple, clean looking dishes. That are packed with colour and most importantly loads of flavour.
Do you have any interesting facts about yourself to share?
During my time at Bishop’s Gate I was given the opportunity by the hotel to experience working in a Michelin Star Restaurant in Cambridge to see the quality of food that they make & service they provide. This really opened my eyes to another side of cooking and I was able to take on the things I learnt during this time and put it into the way I work now. This was an enjoyable and exciting experience and a different type of staff development and training than I have seen before.
What are you most looking forward to in the coming year?
On 18th March 2018 I will be doing a live cooking demonstration on stage for the LegenDerry Food Fest. This festival runs over 3 days, showcasing local food with celebrity chef appearances and demonstrations and live entertainment. I am a little nervous about this but I am looking forward to it as I enjoy what I do.
